Dandelion Salad

Ingredients:

  • Fresh dandelion leaves (young leaves are less bitter)

  • Cherry tomatoes

  • Cucumber, sliced

  • Red onion, thinly sliced

  • Feta cheese, crumbled

  • Balsamic vinaigrette dressing

Instructions:

  1. Wash and pat dry the dandelion leaves, removing any tough stems.

  2. In a large salad bowl, combine the dandelion leaves, cherry tomatoes, cucumber, and red onion.

  3. Sprinkle the crumbled feta cheese on top.

  4. Drizzle the balsamic vinaigrette dressing over the salad, and toss gently to combine.
