Quinoa and Black Bean Bowl with Avocado and Lime (Gluten-Free and Vegan)
Ingredients for Quinoa and Black Bean Bowl:
- 1 cup cooked quinoa 
- 1 can (15 ounces) black beans, drained and rinsed 
- 1 cup corn kernels (fresh, frozen, or canned) 
- 1 cup cherry tomatoes, halved 
- 1/2 red onion, finely chopped 
- 1/4 cup fresh cilantro, chopped 
- 1 avocado, sliced 
- Lime wedges, for serving 
- Salt and pepper to taste 
Ingredients for Lime Dressing:
- Juice of 2 limes 
- 2 tablespoons olive oil 
- 1 garlic clove, minced 
- 1 teaspoon ground cumin 
- Salt and pepper to taste 
Instructions:
- In a large bowl, combine cooked quinoa, black beans, corn, cherry tomatoes, red onion, and cilantro. 
- In a separate small bowl, whisk together the lime juice, olive oil, minced garlic, ground cumin, salt, and pepper to make the dressing. 
- Pour the dressing over the quinoa and bean mixture and toss to combine. Adjust salt and pepper to taste. 
- To serve, divide the quinoa and black bean mixture into bowls, top with avocado slices, and serve with lime wedges on the side.
