Turkey and Avocado Lettuce Wraps (or Marinated Tofu and Avocado Lettuce Wraps for Vegan)

Ingredients for Turkey and Avocado Lettuce Wraps:

  • 1 pound ground turkey (substitute with marinated tofu for vegan)

  • 2 cloves garlic, minced

  • 1/2 onion, finely chopped

  • 1 teaspoon ground cumin

  • 1 teaspoon chili powder

  • Salt and pepper to taste

  • 1-2 avocados, sliced

  • Lettuce leaves (such as iceberg or Romaine)

  • Salsa (gluten-free and vegan) for topping

Instructions:

  1. In a large skillet, heat some olive oil over medium heat. Add the minced garlic and chopped onion and sauté until fragrant and the onion is translucent.

  2. Add the ground turkey (or marinated tofu) to the skillet and cook until browned, breaking it apart with a spoon as it cooks.

  3. Stir in the ground cumin, chili powder, salt, and pepper. Cook for an additional 2-3 minutes until the spices are well incorporated.

  4. To assemble the lettuce wraps, place a scoop of the turkey (or tofu) mixture onto a lettuce leaf, add avocado slices, and top with salsa.
