Carrots, honey glazed and soup

1. Honey Glazed Carrots:

Peel and slice carrots into sticks or rounds.

In a skillet, melt butter over medium heat, add the carrots, and sauté for a few minutes.

Pour in a mixture of honey, a pinch of salt, and a splash of water or orange juice.

Cook, stirring occasionally, until the liquid reduces and the carrots are tender and glazed.

2. Carrot Ginger Soup:

Sauté chopped onions, garlic, and grated ginger in a pot until softened.

Add peeled and chopped carrots, then pour in vegetable or chicken broth.

Simmer until the carrots are soft, then blend until smooth.

Stir in a coconut milk or cream splash, season with salt and pepper, and garnish with fresh herbs or a swirl of yoghurt.
