Potato Love

Potato love: it's a-peeling and mash-tastic, making every meal fan-tuber-lous!"

1. Garlic Roasted Potatoes:

Preheat oven to 425°F (220°C).

Cut potatoes into cubes or wedges and place them in a mixing bowl.

Toss the potatoes with olive oil, minced garlic, rosemary (or preferred herbs), salt, and pepper until coated.

Spread the potatoes on a baking sheet and roast for 30-35 minutes or until golden and crispy on the outside.

2. Potato Leek Soup:

Sauté sliced leeks in butter until softened, then add peeled and diced potatoes.

Pour in chicken or vegetable broth, and simmer until the potatoes are tender.

Blend the mixture until smooth, then stir in a bit of heavy cream or milk.

Season with salt, and pepper, and garnish with chopped chives or parsley.
